With the cold weather we've been having, all I seem to want is comfort food... Who wants a salad in the winter? I'd much rather have chili, red beans and rice, stuff like that... And I kinda blew it with some Greek food on Sunday night.
Anyway, I've been doing better than I used to. Still avoiding most foods and trying more for chicken and fish. Today, there's chicken stir-fry on the menu! It's not rocket science with this recipe, and easy to throw together in just a few minutes. Give it a try and let me know what you think!
DJ's Chicken Stir-Fry
2 large chicken breasts
1tbsp Garlic Powder
1tbsp Onion Powder
Salt & Pepper
16oz frozen stir-fry veggies
12oz bottle of Sweet & Sour sauce
2tbsp olive oil
Sprinkle the chicken with the garlic powder, onion powder, salt and pepper.
Cube or chop the chicken into bite size pieces
Heat the olive oil in a large skillet and fry the pieces of chicken
Once the chicken is cooked, add the vegetables and about half of the bottle of Sweet & Sour sauce to the skillet. You can also add a splash of Soy Sauce to the mixture. Let it cook in the skillet until the veggies are cooked (but not soggy), and then serve it up with some rice! Easy breezy.
Used a 15lb weight to do arm curls, tricep curls and arm lifts. Also did crunches today... My stomach hurts! :)
